Variety: 100% Cabernet Sauvignon Colour: Deep crimson red Alcohol: 14% Bouquet: Complex fragrance of raspberry and cassis lifted, with some integrated cedary oak. Palate: Blackcurrant, cherry, chocolate and fine cedary oak flavours. Medium bodied fruit richness is supported by fine tannins and an elegant finish. Cellaring: Very drinkable now or careful cellaring up to 10 years. Vinification: After picking, the fruit was de-stemmed into traditional open fermenters, where a regime of pumping over, plunging and rack and returns was undertaken. After fermentation, the wine remained on skins until it had developed the complexity required. The wine was oak matured for an average of 18 months in French oak, new and old both puncheons and barriques. No fining, and minimal filtration was undertaken.
